Zesty Wild Atlantic Prawn Slider

1 kg (2 lbs)           Wild Atlantic Prawns
12                           small soft buns
85 g (3 oz)            soft butter
30 ml (2 tbsp)     mayonnaise
5 ml (1 tsp)          grainy mustard
60 ml (¼ cup)    diced celery
6                            chives chopped
pinch                    salt
pinch                    pepper

Butter the buns and grill them on both sides. In a bowl, mix the prawn, mayonnaise, grainy mustard, celery, chives and salt and pepper to taste. Open your grilled bun and place prawn mixture on bun with a few pieces of baby spinach.
